Woods
are the symbol of a true territory, a land where, day after day, people
wish to stay even after the massive emigration towards the coast. Among
its range of products, chestnuts, walnuts, strawberries, blueberries,
blackberries, juniper, a very special tribute has been give to truffle
regarded as a king surrounded by the members of its court: mushrooms.
Typical areas are: the interior of Pesaro and a part of Ascoli
Piceno-first then Macerata and finally Ancona. The most popular are: the
White, tuber magnatum Pico, (once wrongly referred to of Alba and
Acqualagna only), which is the highest quality and the most delicate of
its kind. It’s possible to find it in the areas of Acqualagna, Sant’
Angelo in Vado and Sant’Agata Feltria (Pesaro), from October to December:
the value Valuable Black, tuber melanosporum, from Norcia and
Spoleto, the one referred by Gioacchino Rossini, who used to order it from
France.
It’s typical, from December to February, of Acqualagna (Pesaro) and
Acquasanta Terme, Roccafluvione, Comunanza. Montefortino (Ascoli Piceno)
or Camerino and Visso (Macerata), to be found under pine trees at the end
of winter time at Fossombrone (Pesaro) or Scorzone,
tuber aestivum and tuber uncinatum Chatin, in summer and
winter, almost everywhere. No wards truffle is also cultivated
artificially with specific techniques.
The Pilot Centre of Sant’Angelo in Vado has created truffle plants that
can be transplanted to increase forestation and truffle cultivation. The
activity of preservation and of marketing has led to very good results,
above all in Sant’Angelo in Vado, Acqualagna and Sant’Agata Feltria.
Mountains keep up the tradition of picking and eating mushrooms at
home.
Some people who are fond of mushrooms have started some interesting
mycological activities on the territory. There are many edible kinds of
mushrooms: ceps, mushrooms of St. George, good ovules the most valuable
ones, spugnole, prataioli, galletti, morette,
mazze di tamburo, nebbiolo and many other types, traded
on the local market.
