if the way to a man’s heart is his stomach then you will fall in love
with Montelparo: the maize flour, golden like the sunshine, cooked in
water, slowly stirring with a long wooden spoon to avoid lumps forming,
becomes a soft polenta which one agains is in contact with wood as it is
poured on to the “spianatora” where it is left to settle before being
served with delicious sauces and a generous sprinkling of seasoned
“pecorino” . |
