Verdicchio di Matelica, Spumante, Riserva e Passito
Production area
It corresponds to a valley, which is parallel to the Apennines, and
includes some parts of the municipal land of Matelica, Esanatoglia,
Gagliole, Castelraimondo, Camerino and Pioraco (province of Macerata),
Cerreto d'Esi and Fabriano (province of Ancona).
Grapevine
It is obtained from Verdicchio grapes. Up to a max.of 15% of other
authorized grapes may be blended.
Characteristic
Appearence: brilliant pale yellow.
Scent: it is delicate, fragrantly fresh and persistent, like unripe
fruit.
Flavour: it is a dry, smooth and harmonious wine, with a pleasant
bitter aftertaste.
Alcohol content: min. 11,5°C.
Optimum
age
It is a first-class winer, to be drunk when either young or aged. Its best
matured productions can last without loosing freshness and fragrance.
"Riserva" must be aged for at least 24 months, 4 of which
are spent refining in bottles. Passito may be consumed only from
the 1st of December of the following year.
Accompanying Foods
A wine that is adapetd for numerous types of dishes, however, it is best
served with fish. It is optimal with raw antipastas, flavoursome fish, lasagne
and seafood risotto. A more matured Verdicchio should
preferably be served with sole from the Adriatic Sea, to the
"sapa" or with dried cod (Stoccafisso all'anconitana). The
persistent fragrance together with several food types: Carpegna
prosciutto, ciauscolo, Fabriano salame, spiced salames
and white meats.
