area
It includes the Metauro River drainage basin, in the Pesaro-Urbino
province. This hill territory, which stretches from the Apennine spurs to
the sea, faces south and south-west. It includes 18 councils.
Grapevine
A min. of 95% of the Bianchello grape is used. Up to a
max of 5% grape vine Trebbiano toscano can compete.
Characteristics
Appearence: it is pale yellow with green tones. The freshness and
the vividness of the first period emphasize its trasparency and its
reflections.
Scent: it has a soft, delicate and rather persistent scent. It is
reminescent of fresh fruit and white spring flowers.
Flavour: dry, fresh, harmonious and pleasant.
Alcohol content: min. 11,5°C, Vin Santo min. 15,5°C.
Optimum
age
This wine expresses fragrance and freshness and is at its best in its
year. It can also stand 1 or 2 years of moderate ageing according and
mature.The Vin Santo is released only after 3 years of ageing.
Accompanying
Foods
This lively, light requires drinking in the company of friends. One sip
will satisfy any palate like non other drink. It is favourable with
molluscs, crustaceans and sweet tender fish, either raw or marinated and
delicately cooked. A harmonious relationship between some fish menus and
the vivacity of the Bianchello exists. The tones between pale yellow and
green, the delicate body with a smooth impact verging on dry, and the
definite clean fresh influences, exalt the taste and salty bouquet of live
fish. It is optimal when served with fish that have been slightly brushed
with local extra-virgin olive oil and cooked over embers. It also goes
well with simple dishes of sweet white meats, soups, rice and pasta dishes
lightly dressed.
