Production
area
It includes the hills in the middle of the
Ancona province and a limited number of territories in the Macerata
province. It is possible to mention the term Classico for those wines
produced in the original area, the Castelli di Jesi.
Grapevine
This wine is obtained from Verdicchio grapes. It is possible to blend
up to a max of 15% of other authorized white grapes.
Characteristics
Appearence: it is pale ellow, sometimes with
slight green tones, which turn gold during maturation.
Scent: delicate, fragrant and persistent. It has a floreal and
fruity bouquet, with hints of bitter almonds.
Flavour: dry, refined and harmonious with a slightly bitter
aftertaste.
Alcohol content: Verdicchio dei Castelli di Jesi and Classico min.
11,5°C; Classico Superiore min. 12°C; Riserva min. 12,5°. The Riserva
must have a minimum alcohol content of 12,5°C and its ageing time must be
a minimum of 24 months or a least 6 months spent in bottles. The Passito
has an alcohol content of a least 15°C and about 1 year of ageing; it is
released onto the market one year from harvest.
Optimum age
Preferably, this wine should be drunk between the end of he first year
and that of the second year. Wines that originate from sunny, well
ventilated areas, which are anything but rare, have a greater life and
more character: conserves well for two even up to three years, also with a
brief time spent in wooden casks.
Accompanying Foods
The seven wines which come from the enriched founders, "Castelli
di Jesi" and "Classico", consent to a vast range
of harmony and accompanying of foods, which is rarely comparable in yellow
wines. All "Verdicchio" are suitable to serve with
mediterranean style cooking. Antipastas, white meat dishes, corned meats,
mushrooms, truffles amd fried vegetables. Over and above all, the "Verdicchio"
go best with fish, crustaceans and molluscs.They also go well with
elaborate receipes requiring a wine with strong character.
